This is an absolutely fab recipe, really tasty and comforting on a cold night. Once the meatballs had finished cooking in the slow cooker I added the meatballs and the remaining sauce to a pot of penne and ran some soft cheese through, topped with mature cheddar and baked in the oven on low for 25 mins. As a relatively new user of a slow cooker or Crockpot, it’s such a delight every time I make a successful recipe in one. Not that it’s hard, it’s just such a thrill for me. The idea of dumping all the ingredients into a machine and let it do the work for me is very appealing. And it’s even better than I thought it would be. These slow cooker meatballs are a prime example. Do a bit of prep in the morning, walk away, and a couple of hours later the whole house smells like an Italian restaurant and dinner is ready. Uh, yes please!

Now, the name of this recipe could be totally misleading because I don’t know if meatballs like these are made anywhere in Tuscany. BUT an Italian restaurant I love serves similar meatballs and calls them Tuscan so I’m just going along with it. The mixture of herbs, sun-dried tomatoes and Parmesan definitely give me Tuscan vibes. I also love how the tomatoes and cheese keep the meatballs soft and juicy (helped along by the low-slow cook, of course).

I served the crockpot meatballs over pasta for a simple family dinner. You could also serve them over polenta or with crusty bread to mop up all the delicious sauce and they will be perfect every time.

The best part about this frozen meatball recipe is that it’s fast, super easy, and everybody loves it. On top of that, this recipe is also a super affordable one! These honey garlic meatballs are one of my new favorite meatball recipes! I am always a sucker for a good honey-garlic combo.

And if you’re counting Weight Watchers Freestyle points, there is a simple modification to get this recipe to just 6 WW points! Use your favorite turkey meatball recipe and then spread this to 8 servings (which is totally doable! This recipe will feed my big family and sometimes we even have leftovers!)

Frozen Meatballs:

This is what about 28 ounces of meatballs looks like (use a kitchen scale to easily weigh it out). I often have a big bag of the Costco Italian frozen meatballs on hand because they are delicious, and they usually cost less per pound than the plain ground beef you would use to make homemade meatballs!

PRO TIP:

I love using a slow cooker liner in my Crock-Pot. It makes clean-up a lot easier! You can find them at nearly any grocery store or buy them online. I like both Reynolds and PanSaver, but PanSaver seems to be slightly better quality.

The meatballs only need about 4 hours on low before they are ready to serve! That means that if you realize you still don’t know what to serve for dinner (after lunch), you still have time to pull this slow cooker meal together (yes, this happens to me often).

Ingredients

  • ½ cup milk
  • 4 eggs
  • 2 lbs ground beef
  • 12 ounces bulk mild Italian sausage
  • 1 ¼ cups Italian seasoned breadcrumbs
  • 1/4 cup shredded Parmesan cheese
  • 2 teaspoons salt
  • ½ teaspoon pepper
  • ¼ teaspoon garlic powder
  • 2 (24 oz) jars marinara pasta sauce (or make your own & use 6 cups )

Instructions

  1. In a large bowl, whisk together milk and eggs until combined. Add ground beef, Italian sausage, breadcrumbs, Parmesan cheese, salt, pepper and garlic powder stir with a wooden spoon or mix with your fingers until well combined.
  2. Heat broiler to high place an oven rack about 4 to 5 inches from the broiler. Lightly grease 2 baking sheets with cooking spray or oil. Using your hands, shape (about 40) 1 to 2-inch meatballs from the mixture place on prepared baking sheets.
  3. Broil meatballs 6 to 8 minutes, flipping halfway through, until browned. Transfer to a 6-quart slow cooker.
  4. Top meatballs evenly with sauce. Cover and cook on low 4 to 5 hours in the slow cooker until meatballs are cooked through to an internal temperature of at least 160 degrees F.
  5. Serve on top of pasta, on split hoagie rolls with melty cheese for meatball sub sandwiches, alongside buttery mashed potatoes or on their own as an appetizer.
  6. TO FREEZE: Let meatballs and sauce cool completely. Place in a resealable plastic bag and freeze in a single layer or, freeze in a Tupperware container. Thaw in the refrigerator overnight, then heat the thawed mixture (meatballs and sauce) together until heated through.

Notes

  • This recipe makes a lot of meatballs, so if you don’t plan to freeze any I’d suggest halving the recipe.
