Peaches are the main fruit being eaten around the house these days. They are at the peak of their season here in Colorado and they taste incredible. The Palisade peaches that are grown here in Colorado are better than any peaches I ever ate in Arizona and I am completely in love with them. Yogurt is healthy and tasty, high in protein, vitamin D and calcium. We purÃ©e it into smoothies, eat it in little tubs with fruit on the bottom, top it with honey and granola, give it to the kids in long slurpy tubes and visit trendy fro-yo shops.
In the past few years, however, Greek, "Greek-style," or strained yogurt has become all the rage.

You see it everywhere. Greek yogurt is even being marketed specifically toward men as a high-protein muscle builder. And since 2012, Ben and Jerry's has been offering four flavors of frozen Greek yogurt: Strawberry shortcake, banana peanut butter, raspberry fudge chunk and blueberry graham cracker.
According to Fage, it takes four pounds of milk to make one pound of Greek yogurt. Even fat-free Greek yogurt feels decadent on the palate. It is so appealing that Fage's new plant in Johnstown, N.Y., is making 85,000 tons of finished yogurt annually, and in 2014 will be producing almost twice that.
According to Time Magazine, quoting the New York Governor's Office, the rise in popularity of Greek yogurt has caused the number of yogurt factories in New York to almost triple in the last five years, creating so much of the thick stuff that the sour whey by-product is in danger of becoming an environmental hazard, if not used as livestock feed or in fertilizer.

Vanilla Greek Frozen Yogurt
2 cups full fat or reduced-fat (2 percent) plain Greek yogurt
1 Stir together Greek yogurt, honey and vanilla. Cover and refrigerate at least 1 hour until well chilled. Freeze in an ice cream maker according to manufacturer's directions.
2 For a soft-serve consistency, serve immediately. For a firm, scoop-able consistency transfer to a freezer container and freeze until firm. (Homemade frozen yogurt, especially low fat frozen yogurt, freezes very firm. To serve, let the frozen yogurt soften at room temperature for 10 to 15 minutes or until soft enough to scoop.)

1 cup low-fat vanilla yogurt
1 Combine water and sugar in a small saucepan. Cook, stirring, over high heat until the sugar is dissolved. Transfer to a glass measuring cup and let cool slightly.
2 PurÃ©e watermelon in a food processor or blender, in 2 batches, pulsing until smooth. Transfer to a large bowl. Whisk in the cooled sugar syrup, yogurt and lime juice until combined. Pour the mixture through a fine-mesh sieve into another large bowl, whisking to release all juice. Discard pulp. Pour the extracted juices into an ice cream maker and freeze according to manufacturer's directions.
3 (Alternatively, pour into a shallow metal pan and freeze until solid, about 6 hours or overnight. Remove from freezer to defrost slightly, 5 minutes. I love baking with Greek yogurt and avoiding using as much butter as I can get away with. In this recipe for a peach and blueberry Greek yogurt cake, you’ll be using 2 oz of softened butter and 1/2 cup Greek yogurt to produce a full size 9 inch diameter cake.
