  • 2 courgettes, sliced
  • 1 large onion, sliced into rings
  • 150g sliced fresh mushrooms
  • 1 green pepper, sliced
  • 2 large tomatoes, chopped

  1. Preheat oven to 180 degrees C / Gas 4. Coat bottom and sides of a 1 1/2 litre baking dish with 1 tablespoon olive oil.
  2. Heat remaining 1 tablespoon olive oil in a medium frying pan over medium heat. Cook garlic until lightly browned. Mix in parsley and aubergine. Saute until aubergine is soft, about 10 minutes. Season with salt to taste.
  3. Spread aubergine mixture evenly across bottom of prepared dish. Sprinkle with a few tablespoons of Parmesan cheese. Spread courgette in an even layer over top. Lightly salt and sprinkle with a little more cheese. Continue layering in this fashion, with onion, mushrooms, pepper and tomatoes, covering each layer with a sprinkling of salt and cheese.
  4. Bake in preheated oven for 45 minutes.

Parmesan cheese

Parmesan cheese is not truly vegetarian, as it contains animal rennet. To make this dish 100% vegetarian, omit the cheese or find a suitable vegetarian substitute made without animal rennet. In supermarkets look for the 'parmesan style hard cheeses' which are suitable for vegetarians.

Baked ratatouille recipe (confit byaldi)

Baked ratatouille recipe is a delicious cheesy vegetable casserole. The traditional ratatouille is a French summer vegetable stew, but its roasted version is just as tasty. This recipe features flavorful tomato-bell paprika sauce with vegetable slices on top, topped with melted golden cheese. It can be served as a vegetarian main dish or a side dish.

  • 4 whole sprigs fresh thyme
  • 1 cup olive oil
  • 1 roasted red bell pepper, cut into 1/2-to 1-inch pieces
  • 1 roasted green bell pepper, cut into 1/2-to 1-inch pieces
  • 4 tomatoes&mdashpeeled, seeded and diced
  • 1 tablespoon herbes de Provence
  • Basil leaves, cut into chiffonade (optional)
  • Freshly grated Parmigiano-Reggiano cheese (optional)

Preheat the oven to 300°. In a large skillet, season the eggplant with salt and pepper and sauté in olive oil with 1 thyme sprig and 1 crushed garlic clove until softened. Discard the garlic clove and thyme sprig. Transfer the eggplant to a cast iron cocotte medium baking dish.

In the same skillet, sauté the zucchini with a thyme sprig and crushed garlic clove in olive oil until softened. Discard the garlic and thyme and add the zucchini to the eggplant. Repeat with the onion and another thyme sprig and garlic clove.

Add the roasted red and green pepper. tomatoes, finely chopped garlic and herbes de Provence to the cocotte and stir gently to mix. Season to taste with salt and pepper. Add a few glugs of olive oil if the ratatouille seems dry.

Cover and bake for 45 minutes to 1 hour. Top with basil and parmesan and serve hot, warm or at room temperature.


Ratatouille Recipe Ingredients

This recipe stars fresh produce at its best! And not only are these vegetables super tasty. But they’re also nutritional powerhouses. To get the most flavor out of the dish, use ripe, organic vegetables, if available.

So here’s everything you need:

Onion and Garlic: These allium vegetables create the sauce’s flavorful base.

Bell Pepper: I also added a finely chopped red bell pepper to the sauce. But yellow and orange bell peppers would taste great too! If peppers don’t agree with you, simply leave them out.

Tomatoes: I used tomatoes two different ways in this dish. One cup of tomato purée (or crushed tomatoes) goes in the sauce. And slices of fresh Roma tomatoes get added to the vegetable spiral. I prefer Roma tomatoes here, but you can use any tomatoes that look good at your store.

Eggplant: For this recipe, I used Japanese eggplants. They’re smaller than Italian eggplants, which is the variety most often sold in grocery stores. Using a smaller eggplant makes it easier to get slices around the same size as the other vegetable slices. But any eggplant will work in this recipe.

Zucchini: I added both regular green zucchini and yellow zucchini to this dish for the color variation. But feel free to use whatever variety of squash is available.

Potatoes: For an added boost of flavor and texture, I layered in some tasty Yukon Gold potatoes in this dish.

Fresh Herbs: Garnish the dish with fresh basil and thyme to add brightness to the ratatouille recipe.

Extra-Virgin Olive Oil: Use extra-virgin olive oil in the sauce first. Then, mix it with some herbs and drizzle it over the dish before baking. And once again – with some balsamic vinegar – before serving. The balsamic isn’t traditional but adds a wonderful extra layer of flavor—leave it out if you prefer.

Salt and Pepper: Salt and freshly ground black pepper are always invited. Season with salt and pepper to help pop the dish’s flavors.


Baked Ratatouille

Heat the oil over medium heat in a large pan and put the fresh herb sprigs in (the whole enchilada). Sautee until fragrant and then add the onion and continue sauteeing until the onion is translucent. Add the garlic and sautee for 30 seconds, until the garlic is golden and fragrant, then add the fresh tomatoes. When the tomatoes become soft and start to fall apart add the tomato sauce, balsamic vinegar, red pepper flakes* (see note), garlic salt and salt and pepper to taste. Turn the heat down to medium-low and let simmer, covered, for about 25ish minutes, stirring occasionally. The sauce will reduce, thicken to a more paste-like consistency and will darken a little in color. Fish out the sprigs of the rosemary, thyme, oregano and sage and discard (they will probably be just bare sticks).

Separate 1/3 C of the tomato sauce you just made and put into a mixing bowl. Whisk in an extra 3 tbsp of olive oil and another 1 tbsp of balsamic vinegar to create a vinaigrette.

*Note: I use about 1 tsp of red pepper flakes to give it a mellow kick, you can use more or less (or none!) as suits your taste.

Cut the ends off the remaining vegetables. Get out a mandolin (or a very sharp knife) and slice the vegetables very thin. Spread a generous layer of the tomato sauce on the bottom of a 9X13 oven-safe pan and arrange the vegetables on top of the sauce with just a little of each veggie showing (kind of like an accordion- if you have seen the movie Ratatouille, it should be done like that). When you are done, spread the vinaigrette (from the tomato sauce) on top of the veggies. Top with some salt and pepper to taste Cover with foil and bake for about 40 minutes. Take off the foil and bake for another 10 minutes or until the veggies are visibly soft (but not brown) and the tomato sauce is bubbling around the veggies. Let cool for about 20 minutes before handling and enjoy!


  • 2 large tomatoes, green tops removed
  • 1 garlic bulb/head, tip cut off to expose the cloves
  • 1 Japanese eggplant or 2 to 3 baby eggplants
  • 1 unpeeled yellow zucchini
  • 1 unpeeled green zucchini
  • 1 red bell pepper, seeds removed
  • 1 very large carrot, orange is best, but any color will do
  • 3 tablespoons tomato paste
  • 1/2 teaspoon salt
  • 2 tablespoon olive oil + additional for drizzling
  • 2 tablespoons fresh thyme
  • 1 tablespoon fresh oregano
  • Black pepper to taste
  • Salt to taste

Preheat your oven to 400 F. Place the tomatoes and garlic bulb onto a large piece of foil, about 12 x 12 inches.

Drizzle the tomatoes and garlic bulb with 1 teaspoon olive oil and then fold the foil up and over into a loose pouch around the tomatoes and garlic. Place the foil pouch onto an ungreased baking sheet or cake pan.

Roast the tomatoes and garlic bulb for about 45 to 50 minutes, or until the skins on tomatoes are quite wrinkly and dark in color, and the garlic is fragrant and tender.

Remove the foil pouch from the oven, open the pouch and allow to cool about 15 minutes, or until easy to handle. Once cooled, carefully remove the skins from the tomatoes and scoop out the cooked garlic from the bulb.

Decrease your oven's temperature to 375 F. Slice the eggplant, zucchini, red pepper, and carrot into thin even slices, about 1/6 to 1/4 of an inch thick using either a sharp knife or mandoline.

In a food processor or blender, blend the roasted tomatoes and garlic along with the tomato paste, sea salt, and 2 tablespoons olive oil until smooth, stopping and scraping down the sides of the blending container as needed.

Spread about 3/4 of the sauce into the bottom of a lightly greased ceramic or metal oven safe dish, about 8 inches in diameter. Arrange the sliced vegetables into a spiral ring, alternating the colors to create a colorful pattern with the vegetables.

Once all the vegetables have been placed securely and the dish is full, drizzle them with olive oil (about 1 1/2 tablespoons) and the remainder of the sauce. Top with fresh thyme, oregano, black pepper, and salt.

Cover with a layer of parchment paper and place onto the middle rack of your oven. Bake for 1 hour or until vegetables are tender and fragrant. Remove the ratatouille from the oven and allow to cool for about 10 minutes before serving.


Preparation

  • Position racks in the top and bottom thirds of the oven and heat the oven to 400°F. Line two large rimmed baking sheets (12同-inch sheet pans are a good size) with foil and top with a sheet of parchment. In a large bowl, toss the onions, peppers, eggplant, zucchini, garlic, olive oil, rosemary, and 1-1/2 tsp. kosher salt. Spread the vegetables evenly over both sheets. Don’t spread the vegetables too thin or they may burn (they shrink a lot as they cook).
  • Roast, stirring the vegetables a few times and swapping the positions of the pans once, until the vegetables are slightly collapsed or shriveled, starting to brown, and very tender, about 45 minutes. If the vegetables look like they may burn, turn down the heat or pile them closer together. If they look dry, drizzle on a little olive oil. Divide the tomatoes between the two pans and continue to roast until the tomatoes soften and shrink and the other vegetables are well-browned, another 30 to 50 minutes. Scrape all the vegetables and any juices into a serving bowl. Toss with the basil, taste for seasoning, and serve warm.

Once you’ve washed your vegetables, it’s now time to sharpen up those knife skills because it will require some very thin slicing. If for some reason it seems like a bit too much, you can absolutely pull out your friend, the mandolin, and allow it to be your guide for this.

I occasionally use my mandolin, but when slicing delicate vegetables for this such as eggplant and tomatoes, I find the mandolin can be a bit too harsh and can make things break apart and mush together.

Once the vegetables are all sliced up, I like to lay them next to each other on a sheet tray for easy access to layer everything up. On the bottom of a casserole dish or cast-iron skillet, pour in some crushed tomatoes and then season the top of it with fresh thyme, salt, and pepper. From there you want to layer on the vegetables.

Recipe Instructions

To make the Ratatouille, here’s a simplified version of our “Roasted Ratatouille” recipe. Mix together all of the following ingredients until well combined.

  • 2 cups each of diced zucchini, eggplant, and onion
  • 3 cups cherry tomatoes
  • ¼ cup olive oil
  • 4 cloves garlic, minced
  • 5 sun-dried tomatoes, minced
  • 1 tablespoon tomato paste
  • 1 tablespoon dried Italian herb seasoning
  • salt and fresh black pepper

Roast on a parchment lined baking sheet at 400 degrees for 40-45 minutes, turning once halfway through baking. Keep refrigerated until ready to use.

Preheat your oven to 400 degrees. Take five minutes to have all your ingredients ready…

And over medium heat, melt the butter in a cast iron skillet or other large pan.

Add the bread cubes to the pan and toss the bread around until it’s lightly toasted. Arrange the bread so that it covers the entire bottom of the pan in one layer (you might need more bread to cover the bottom of your pan, depending on the pan’s size).

Spoon the roasted ratatouille over the bread in one layer…

And sprinkle on the cheese. You can use whatever kind you like. We used Irish Cheddar.

Crack your eggs over the cheese, spacing them evenly apart. Dot the cherry tomatoes around the eggs.

Transfer the pan to your preheated oven and allow to cook until the egg whites are set, but the yolks are still runny, about 12-18 minutes. Yes, that’s a pretty wide range, but all ovens are different. You just want to make sure the eggs don’t overcook accidentally. (Like I kinda did. Luckily, they were still runny inside, and crisis was averted.) When you begin to reach the end of your cooking time, just check the pan regularly.

Take the pan out of the oven and garnish with coarse sea salt, cracked black pepper, crushed red pepper flakes, basil, and thyme. Serve with a bit of fruit for an amazing Mother’s Day breakfast. We highly recommend blood oranges.
